Add olive oil to the measuring cup and stir around the leftover butter mixture with the olive oil.Place the scored potatoes flesh side down on the baking sheet.Pour the butter mixture onto a baking sheet and tilt the baking sheet so the mixture covers most of the surface area.In a measuring cup add 1 stick of melted butter, 1 packet of French onion soup mix, fresh parsley, cracked black pepper, and grated Pecorino Romano cheese.But, don’t slice them all the way through. Score the potatoes by cutting slits into the flesh: 3 slices one way and 2 slices the other way making a tic tac toe pattern.
